Why do you use collagen casing on the meat sticks?Updated 10 days ago
We use collagen casing for a few reasons:
- It's more durable and has a consistent, uniform shape and size
- It comes pre packaged and ready to use, so no soaking required like natural casings
- It provides a more pleasant texture when eating
- It fits with our nose to tail philosophy: collagen casing is made from the hides and bones of cattle that would otherwise be discarded
The casing is completely safe to eat and is a standard part of traditional droewors making.
