We refer to our biltong as "air dried steak" because most Australians aren't familiar with what biltong is. By calling it air dried steak, it gives people an immediate sense of what they're getting, which is a whole muscle, air dried beef product.
We still label it as biltong on the back of the bag, because that's exactly what it is - traditional, authentic biltong.
