What you're seeing is called efflorescence, a natural phenomenon where salt and proteins migrate to the surface of the meat during the drying process, leaving a white powdery residue. It's a sign of a natural, traditional drying process and is perfectly safe to consume.
How to tell the difference between efflorescence and mould:
- Efflorescence: powdery and dry to the touch
- Mould: fuzzy or slimy to the touch
