Salt is a core part of how biltong works as it draws moisture out of the meat and keeps it shelf stable without cooking or refrigeration. So some sodium is unavoidable, and honestly necessary.
That said, our sodium levels are on the lower end compared to most dried meat snacks on the market:
- Biltong: 869mg per 100g
- Droewors (meat sticks): 1,050mg per 100g
For context, the average bag of commercial jerky contains around 1,400mg of sodium per 100g, so our biltong comes in at nearly half that. Partly by design, partly because we eat so much of it ourselves and didn't want to overdo the salt either. 😄
