After air-drying a marinated steak, you're left with a large chunk of solid, dry meat - this is what's known as a "biltong steak" 🥩
Although it can be eaten as is, most people find it easier to slice it into thin strips before eating. For the best texture, we recommend cutting your biltong against the grain of the meat. This breaks up the muscle fibres and makes it much easier to chew.
