WTF IS BILTONG?

It’s a delicious dried meat snack that’s made from big chunks of beef steak, marinated in vinegar and other spices. Various spices can be used to add flavour but the most common include black pepper, coriander and sea salt. The marinated steaks are then hung in a room that circulates air around the pieces to slowly dry them out at ambient temperatures. This keeps biltong soft and tender during the drying process. Once dried, you’re left an air dried steak aka biltong, that can easily be sliced into thin, easy-to-enjoy strips.

At this point, some of you are probably thinking, “Oh, so it’s like beef jerky, right?”.

Well — only in that they’re both dried meats. But otherwise, hell no! Most beef jerky is very processed, where thin strips of meat are covered in artificial sauces and then cooked at high temperatures over a few hours inside drying ovens. To be frank, the team at Barbell Foods have never been beef jerky fans as most commercial jerky is loaded with preservatives, sugars, and other bad stuff. Barbell Biltong is healthier and tastier than beef jerky and contains no preservatives, dairy, gluten, soy or added sugar.

It takes 7 days to dry our biltong to perfection, and no heat is used to cook the meat during this process. This gives it a softer texture and makes it less chewy compared to jerky — it’s a welcome contrast to the often-leathery texture and artificial taste that comes with most commercial jerky on the market.

Just in case you’d missed it earlier, biltong is made from dried beef steaks. By sourcing the healthiest beef possible and avoiding preservatives, our biltong differs from most in that it’s made with a health focus in mind. We use biltong to complement our own lifestyles as the perfect high protein, low carb, real food.

It’s marinated in vinegar and other spices to add flavour and after that, we hang it out to air dry.

During this time, the steaks lose most of their weight from water evaporation. About 3kg of beef is used to make 1kg of biltong. What’s left is a convenient and dense source of protein that tastes great — a biltong steak (more on this below).

After you’ve air dried your marinated steak, you’re left with a large chunk of solid, dry meat. This is known as a “biltong steak”. Although it can be eaten like this — most people tend to find it a bit easier to slice it into pieces and eat it that way. Cutting biltong against the grain of the meat will also make it easier to chew.

NUTRITION & INGREDIENTS

All of our biltong flavours are made with halal-certified beef. Our beef liver powder is also made using 100% halal-certified beef.

Please note, however, that our droewors are not considered halal as they are made using wild kangaroo, which is not harvested in accordance with halal principles.

Per a 100g serving, our meat snacks have 40g of protein, 30g of healthy fats and zero carbs or sugars. The below image shows the difference between our biltong and the typical jerky bag:

 

It's a 12 month shelf life on all of our meat snacks when unopened and stored in a cool & dry environment (i.e. the pantry).

Hell no!

We don't add any sugar or artificial preservatives to our biltong. We simply use grass-fed & finished organic beef, vinegar and spices. Therefore, on average, there's less than 1 gram of sugar per 100g serving. 

Our ethos when it comes to making biltong is no bulls%&t ingredients, unlike most other brands which are coated in sugars and artificial preservatives to sweeten the flavour.

Yes! All of our meat snacks are made using simple ingredients - organic meat, vinegar and spices - so they are perfect for the carnivore & keto diet.

All of our products are high in protein and healthy fats, and there are no sugars/preservatives.

Dried meat snacks require a high sodium content, as the salt is what helps draw moisture out of the meat - thus preserving it from bacteria. 

However, the sodium content in our biltong is on the low end, when compared with most other biltong/jerky products.

Per 100g, there is 1050mg of sodium in our biltong, whereas the average bag of jerky will contain 1400mg of sodium per 100g.

All of our biltong is made using 100% organic, grass-fed & finished, Australian beef.

Our droewors, on the other hand, is made using a blend of 60% wild kangaroo and 40% organic beef brisket.

Our classic and chilli flavours, however, contain cayenne pepper and therefore are not nightshade-free.

We currently source all of our beef from farms in Queensland. All of the beef is grass-fed & finished, organic and regeneratively farmed, making it some of the best quality meat in the world 👌

When adding products to your cart, there is an option that states 'SUBSCRIBE & SAVE10%'. By clicking this option, you can start a recurring subscription that will always include a 10% discount.



 

When selecting this subscription option, you are presented with a drop down list which allows you to select the frequency at which your biltong subscription order is placed. Simply select the frequency that you would like your biltong to be delivered, i.e. every 14 days, every 30 days, every 45 days, etc.

 

You can modify or cancel your subscription at any time, so there is no obligation to keep this subscription running.

When adding a product to your cart, select the option that states 'SUBSCRIBE & SAVE10%'. By clicking this option, you can start a recurring subscription, for that product, that will always include a 10% discount.

After doing this, simply follow the regular checkout process as usual, and your subscription will be activated.

You can update, modify and cancel your subscription by logging into your account through our online website.

SHIPPING, RETURNS & REFUNDS

You better lawyer up because these are our demands... 
We have a 30-day return policy, which means you have 30 days after placing your order to request a return if you are unhappy with it.

To be eligible for a return, your item must be unopened and in the same condition that you received it.


To start a return, you can contact us at [email protected]. If your return is accepted, we’ll send you instructions on how and where to send your package. Items sent back to us without first requesting a return will not be accepted.


Damages and issues
We're only human and occasionally do make mistakes so upon receiving your order, please contact us immediately if the item is defective, damaged or if you receive the wrong item so that we can make it right. We'll also make sure to fire the responsible party (unless it was me) and we'll unfriend them on facebook.


Refunds
We will notify you once we’ve received and inspected your return, and let you know if the refund was approved or not. If approved, you’ll be automatically refunded on your original payment method. Please remember it can take some time for your bank or credit card company to process and post the refund too. It was a pleasure doing business with you.

We only currently sell our products within Australia and aren't shipping worldwide, so unfortunately, if you live outside Aus, you'll have to survive without our delicious meat snacks for the time being.

 

However, we'll certainly let you know, in the future, if we begin shipping internationally. Keep your ears and eyes open for when that spectacular day arrives 😁

Once we receive your order, we typically aim to pack and dispatch your order on the next business day (for example, and order placed on Friday will likely be dispatched on Monday).

Below are our expected shipping times (after dispatch) to each state/territory:

NSW/VIC/ACT: 2-4 business days

QLD/SA: 3-6 business days

WA/NT: 7-10 business days

Standard shipping is free on all orders! ✈️

Express shipping, however, incurs a $12 fee.

WHY EAT KANGAROO?

 

Kangaroo meat is ethically harvested in the wild and is some of the most nutrient-dense meat available 🦘

The lean meat from kangaroo is considered exceptionally healthy and, being naturally organic, is also high in protein, minerals and vitamins. It has double the amount of iron contained in beef 💪

There is also a common misconception that kangaroo are disease-ridden animals, which is simply false. Although they are native, an overabundance of kangaroos threatens biodiversity and degrades forest understory through their competition with our other native species.

Indigenous Australians and the early settlers relied on eating kangaroo as a vital source of protein, and it was only recently that eating kangaroo came out of fashion. Now with the loss of natural predators, greater availability of pasture and less hunting pressure, kangaroo population numbers have grown out of control in some areas.

Population management means that those kangaroos that aren’t harvested will experience less suffering through decreased competition for scarce resources. Sadly, it’s not uncommon for millions of kangaroos to starve to death in periods of drought.

With the overpopulation of kangaroos placing increasing stress on Australia’s fragile ecosystems, a shift towards eating kangaroo meat will help restore their numbers to sustainable levels.

 

Ever had a sausage? Well, droëwors is a delicious South African style of sausage that’s been air-dried. The end result is a meat stick that makes for an exceptional dose of delicious protein that’s easy to take just about anywhere you go.

In our droëwors, we use a blend of wild kangaroo and beef brisket, and slice the meat sticks into bite-sized pieces 😋

REGENERATIVE AGRICULTURE

Regenerative agriculture is a method of farming that puts carbon back into the soil, improving soil health and restoring ecosystems 🌏

We do our best to source our beef from farmers practising regenerative agriculture and we are behind it in every way we can be.

Regenerative farmers herd their cattle in a pattern that mimics a natural feeding cycle, preventing cattle from overgrazing the land. As a result, the grass remains healthy and fertile, and is better able to pull carbon from the atmosphere and store it in the soil 🌞

When grasslands are healthier and better able to pull carbon from the atmosphere to be stored in the soil as carbohydrates (this process is called photosynthesis), the health of the soil is improved. As a result, the soil becomes nutrient-rich, creating more nutritious food that is more resilient in the face of drought.

Essentially, Regenerative farming can put more carbon back into the soil than is being taken out - a true regenerative cycle! 🌳
